Jean-Paul Pando and his little domaine La Mutine are bringing a breath of fresh air to the hillsides of Vézelay. We love it!

A few years ago, Jean-Paul Pando left the restaurant industry to devote himself entirely to winemaking. After training in Provence, Margaux, and then Meursault, he settled in 2022 in Island, a small village on the outskirts of Vézelay and the Morvan region, to establish Domaine La Mutine.

On his small organically farmed plots, Jean-Paul works primarily by hand, employing an approach that is as natural as it is rigorous. With native yeasts, very few inputs, minimal use of sulfur, and gentle aging, his wines possess the energy, candor, and precision that immediately won us over.

We are therefore delighted to present the five new vintages that have just arrived at the cellar!

On the white side, the 2024 Saint-Véran and the 2024 Bourgogne Aligoté offer two luminous, crisp, and deeply indulgent expressions of the vintage. They’re joined by a major new release: a magnificent 2023 Chablis, to which extended aging has added even more depth, texture, and complexity.

And then there are two new Pinot Noirs, both vinified from whole clusters, but using two very distinct approaches.

Sur les Roches comes from a lieu-dit with shallow limestone and marl soils. The grapes fermented for fourteen days as whole clusters, with alternating punch-downs and pump-overs, before aging in stainless steel tanks. Bottled in July 2025, this is a vibrant, deep, and delicately structured Pinot Noir, characterized by a beautiful mineral freshness.

Les Jus blends three lieux-dits: Sur les Roches, La Chanterie, and Clos Du. Here, Jean-Paul opted for a very gentle eight-day maceration with whole clusters, followed by pressing before all the sugar was consumed, then an additional four to five days of fermentation in the must. Also aged in stainless steel tanks and bottled in July 2025, the wine is incredibly juicy, supple, and indulgent, with vibrant fruit and remarkable drinkability.

These five new vintages confirm Jean-Paul Pando’s immense talent and the unique place that La Mutine is already carving out for itself among Burgundy’s most exciting young estates.
