Aging: 12 months in barrels, then 6 months in stainless steel vats. Bottled according to the lunar calendar.

Long aging allows this wine to age very well. Minerality is always present despite the grapes always being harvested at full ripeness.

Domaine Dandelion's great and beautiful cuvée, the one that has obviously made their reputation. It's a pure Pinot Noir made in the true Burgundian tradition, with beautiful grapes harvested when ripe, vinified in whole bunches and macerated for around twenty days. The grapes were then delicately foot-pressed before going to the press. Finally, the wine was aged in old, multi-wine barrels to avoid any marking of the wood. No sulfur was used, of course. Quite simply, a great wine, but one that needs a few more months of rest before it can be uncorked, according to Christian. So please wait patiently for the wine to rest and take flight ;)

Behind its humble appearance, Les Farbottes cuvée reveals a deep, dense wine, imbued with superb energy. It has a real personality, already well established, and is as memorable as the juice itself.

Pinot noir on clay-limestone soil, this Burgundy displays an amplitude and finesse rare in the region. The estate's "petite cuvée" of Pinot Noir is exceptional in every way, and may surprise many of your guests. Not to be missed!

100% Chardonnay. Vineyard located near the Col de Beaufer (300m altitude), west of Tournus. Aged for 18 months, then 4 months in bottle. A very aromatic, powerful wine with good length. It can be enjoyed now with food, but will reach its full potential after a period of aging.

Don't miss the incredible Cuvée Léandre. A UFO aged for 30 months, available in tiny quantities.

A magnificent parcel of Chardonnay located at 400m altitude on the edge of the forest, facing south, on 4 to 5 m of Jurassic limestone scree.

"Where it all started with our adventure, our baby Joujou, made from old gamay vines from next to our house where we let our sheep and pigs graze and work during the wintertime. Lots of manual labour from ourselfs during the rest of the year, but this turns out to some great grapes. Terroir is a mix of decomposed granite, quartz and clay. Yield it not that high (like the rest of our plots and gives us only around 18Hl/ha). After taking the grapes from the land it will undergo a semi carbonic in concrete and stainless steel with a bit direct press gamay. After pressing we put it together in one big fiberglass dome where the wine has still room to dance and finish the fermentation. Then aged for more than 10 months before bottling in the same dome. Crazy energetic wine with a great acidity."
