A magnificent parcel of Chardonnay located at 400m altitude on the edge of the forest, facing south, on 4 to 5 m of Jurassic limestone scree.

Situated at an altitude of 400 metres on white marl soils and facing south-east, this parcel of Saint Romain, from which the grapes come, is planted with old vines over 80 years old.

Maximum of 1 bottle per person

Vosne Romanée terroir, clay-limestone. A 50/50 blend of whole-cluster Pinot Noir and destemmed Gamay. Cold pre-fermentation for 3 days, 15-day fermentation in stainless-steel vats, slow pressing and racking into 228L barrels. Aged 11 months.

The estate's finest cuv! Pinot Noir from a 60-year-old vineyard, entirely worked by horse with controlled yields (35 hl/ha). Vinification using whole grapes, without any additives or sulphur — all signs of a deep respect for time and the raw material. Aged for 12 months + 12 months in the bottle. On the palate, it has remarkable depth: intense black fruit, wild charm and a restrained energy that speaks of patience and happiness in the bottle. A great pleasure to drink now, it also promises excellent ageing potential.

Aurore est un très beau Chardonnay planté sur une coulée de basalte il y a maintenant 4 ans. C'est une vigne jeune mais au potentiel impressionnant. 

"Where it all started with our adventure, our baby Joujou, made from old gamay vines from next to our house where we let our sheep and pigs graze and work during the wintertime. Lots of manual labour from ourselfs during the rest of the year, but this turns out to some great grapes. Terroir is a mix of decomposed granite, quartz and clay. Yield it not that high (like the rest of our plots and gives us only around 18Hl/ha). After taking the grapes from the land it will undergo a semi carbonic in concrete and stainless steel with a bit direct press gamay. After pressing we put it together in one big fiberglass dome where the wine has still room to dance and finish the fermentation. Then aged for more than 10 months before bottling in the same dome. Crazy energetic wine with a great acidity."
