François Dhumes is Auvergne à cru. Not the clichés, but the heights, the lava flows and the wines without artifice.
François Dhumes is a man who fell in love with him and his incredible volcanic juices. It's in the vineyard that this Auvergne native feels in his element. After five years as a salaried employee with no passion, he bravely took the plunge with one hectare in 2005, working alongside the Tricot family, Patrick Bouju and Stéphane Majeure at Domaine de Peyra.
"I learned from them. And then, it was the cannons that I drank. If you're going to make wine, you might as well make something you like, something you can drink. I went to them for advice and then did what I felt was right. Intuition, feeling, talent - although his great modesty would certainly not allow us to use that term - these are his three pillars.
His traditional, common-sense method (whole harvest, four-week maceration with CO2 saturation) generates very little extraction, which often results in clear juices with good structuring acidity. The result is Pinot Noirs and Gamays full of energy and devilishly drinkable.
"Today, if I had to define my method, I'd say it's non-manipulation. I do very little pumping, no racking, no punching down. Overall, I do as little as possible in the cellar. The idea is to keep the grapes as they really are.
Settled on the volcanic slopes of Volvic, François works organically, without inputs or make-up. Vibrant Gamays, taut whites, inspired macerations... His cuvées don't cheat. They tell the story of a place, a season, an intuition.
The result is lively, digestible wines full of energy: Minette, Zohra, Nuit Blanche... Each bottle has its own character and personality. Unique wines, for those who love naturalness without folklore.
