De Béru Athènaïs
Chablis, differently
In the north of Burgundy, in the heart of a famous appellation but often unknown to true wine lovers, Athénaïs de Béru is a rebel. It must be said that working biodynamically, with small yields, seeking maturity and expression of the terroir, is not common in Chablis.
Here, unfortunately, quantity is often preferred to quality. But for a few years now, authentic and motivated winemakers have decided to change things. Alice and Olivier de Moor opened the way, Thomas Pico followed them and today Athénaïs de Béru joins them.
"In Chablis, there are not many of us working in organic, but we form a good group. We found ourselves in resistance despite ourselves. But these small domains are doing very well and are restoring the image of Chablis, which had become a very standardized product," explains Athénaïs with conviction.
This young winemaker took over the family estate between 2006 and 2009 and immediately began the conversion to organic farming. Since 2010, all the plots are organic and also 100% certified biodynamic. At the head of 15 hectares, she produces mainly 5 cuvées of Chablis including the 1er cru Vaucoupion and the superb Clos Béru. Athénaïs' wines have now reached an impressive level of precision and perfectly reflect these beautiful terroirs spread around the hill of Béru and worked with the greatest respect throughout the year.
"When people tell us that our wines are not like the Chablis they are used to drinking, we take it as a compliment. (laughs). People think it's very mature. We explain to them that we make smaller yields, that we harvest at maturity, etc.," adds Athénaïs with a big smile.

Bourgogne Pinot Noir 2022

Whole bunches are vatted and fermented in a truncated wooden vat; Fermentation with indigenous yeasts and vinification with no inputs; Grapes are gently infused; Light pumping over and punching down ensure gentle extraction; Total maceration of 2 to 3 weeks; Finally, ageing for one year in 12 to 18-month Burgundy barrels.
This wine is the perfect definition of a natural Burgundy Pinot Noir: fresh, slender, perfectly structured, spicy just right, and capable of provoking immediate pleasure. A sure-fire favorite.

Bourgogne Chardonnay 2022
De Béru Athènaïs€27.00Here we have a little nugget we'd like to drink more often. This Chardonnay also comes from a vineyard located in Saint-Bris in Yonne, northern Burgundy. Again vinified without any inputs, this wine reads like an open book. It's obvious. Citrus, substance, length, freshness, aromatic intensity, this energetic Chardonnay is capable of getting everyone to agree at an aperitif, while standing up to a salt-crusted sea bass. You won't come across "little Burgundies" like this very often.

Chablis Terroirs de Béru 2022

It is a blend of the estate's different parcels, whose common features are, first and foremost, their altitude, their northern location in the Chablis vineyard and the strong presence of Kimmeridgian limestone in the soils.

Chablis Côte aux Prêtres 2022
De Béru Athènaïs€39.00La Côte aux Prêtres takes its name from its proximity to the pilgrim trails to Vezelay and Compostelle. It's a beautiful vineyard overlooking Béru. This hilltop dome enjoys magnificent exposure and is always very windy. The terroir is mainly composed of small Kimmeridgian limestone pebbles eroded over time. Chablis Côte aux Prêtres is a wine of great tension, whose powerful minerality is expressed by notes of iodized salt. It is a wine of great sapidity.

De Béru Athènaïs€43.00The highest point on the hill of Béru, Montserre is, as its name suggests, a summit of "Serres", a particular geological formation, a superposition of highly angular fossilized limestone slabs. This unique terroir produces wines with a strong personality characterized by their chewiness, concentrated body and smoky, iodized mineral notes.

Chablis Clos Béru 2020
De Béru Athènaïs€79.00This is the emblematic cuvée of Château de Béru. It comes from a vineyard situated at an altitude of 300 m, planted around the château on an outcrop of pure Kimmeridgian limestone bedrock and surrounded by an enclosed wall several hundred years old. A long ageing period of 18 months in demi-muids, followed by a year in foudre and 6 months in bottle, is needed to tame the wild intensity of this powerful, mineral and complex wine.
