Dandelion
The great return of Hautes Côtes Nature!
Domaine Dandelion has raised Hautes Côtes de Beaune to a new level.
Six years ago, we were proud to present the first vintage of Domaine Dandelion. Morgane Seuillot, a young winemaker based in Mavilly-Mandelot, had impressed us with her mastery and high-precision natural vinifications. She took over the family vineyards in early 2016 - one hectare in the Hautes Côtes de Beaune - and set about her task with conviction and determination. Christian Knott, former cellar master at Domaine Chandon de Briailles, joined Morgane and the two now form a highly complementary duo on the estate.
For this eagerly-awaited 2023 vintage, which both winemakers believe to be their most successful yet (!!), we're delighted to present two new releases, two new cuvées born of the duo's hard work: La Plage and Fruit défendu. Presentations :
On the beach Hautes Cotes de Beaune 2023
This is the first vintage of this cuvée at Domaine Dandelion. It is made from a blend of 3 different plots in the Hautes Côtes de Beaune region. The terroir is partly sandy, which explains the cuvée's name. This sandy soil makes the wine extremely drinkable, with finesse and verticality.
Fruit Défendu 2023
A new cuvée and a proud moment for Morgane and Christian! They fought tirelessly to recover this parcel and avoid having to uproot this magnificent hundred-year-old vine. They then worked tirelessly to bring out the best in it. And here's the result. Small quantities but big emotions.
Hautes Côtes Nature 2023
Domaine Dandelion's great and beautiful cuvée, the one that obviously made their reputation. It's a pure Pinot Noir made in the true Burgundian tradition, with beautiful grapes harvested when ripe, vinified in whole bunches and macerated for around twenty days. The grapes were then delicately foot-pressed before going to the press. Finally, the wine was aged in old, multi-wine barrels to avoid any marking of the wood. No sulfur was used, of course. Quite simply, a great wine, but one that needs a few more months of rest before it can be uncorked, according to Christian. So please wait patiently for the wine to rest and take flight ;)

The wines are made from whole bunches, with a vatting period of around twenty days, a passage under the old wooden press, ageing in old barrels and a minimum of intervention: no pumps, no synthetic products. Consistent with their principles in the vineyard, Morgane and Christian use no sulfur, and can proudly display the term "nature" on their magnificent labels, made in Auvergne in a paper mill dating back to the 15th century. They are made from cotton, linen and hemp fibers. The little flowers embedded in the paper (cornflowers, calendula, grasses, ferns...) are grown on site, then the labels are cut and glued by hand.
Hautes Côtes de Beaune 2022 presents itself wonderfully. It's a great Burgundian pinot noir, a delicate, deep wine, full of energy and with an evolutionary potential that leaves you dreaming. In fact, having recently tasted the 2019, its evolution in just a few years is spectacular. We would therefore strongly advise you not to drink this beautiful cuvée too quickly ;)
In view of the huge interest in Morgane and Christian's wines, we have had to limit quantities so that as many of you as possible can enjoy them. All double orders will be automatically cancelled. Thank you for your understanding.
