Domaine Dandelion has raised Hautes Côtes de Beaune to a new level.
We are always delighted to receive the new vintage from Domaine Dandelion. Over the years, Morgane Seuillot and Christian Knott have established themselves as one of the most exciting producers in the Hautes-Côtes de Beaune, with an approach marked by exceptional dedication.
On just three hectares, every detail is carefully considered. The soil is worked by horse, the vines are tended with meticulous care, and all tasks are performed by hand. In the cellar, whole-cluster vinification takes place without any additives, yet never at the expense of precision. Every decision aims to let the terroirs speak as accurately as possible.
This philosophy comes into its own on these high-altitude plots, some of which reach over 420 meters, such as the one that produces the Aube cuvée. This natural freshness, combined with viticulture of great finesse, yields deep, vibrant, and remarkably balanced wines.
Needless to say, we hold Dandelion in very high regard. These are wines capable of aging with impressive grace, yet they already offer immense pleasure today thanks to the purity of their fruit, their energy, and their depth. These are bottles that leave a lasting impression and which, in our opinion, rank among the finest examples of their appellation.
4 cuvées available: a few bottles of PetNat 2025, the Grand Cidre 2024, and the two highly anticipated flagship cuvées, the Hautes Cotes Nature 2024 and the Aube 2024, a single-vineyard wine with even greater intensity.
As always, we’ve had to limit quantities so that as many people as possible can enjoy them: 1 bottle of Aube per person and 2 bottles of Hautes Cotes Nature.
Hautes Côtes Nature 2024 : Domaine Dandelion’s flagship wine - the one that has undoubtedly made their reputation. This is a pure Pinot Noir crafted in the true Burgundian tradition, made from beautiful grapes harvested at peak ripeness, vinified as whole clusters, and macerated for about twenty days. The grapes were then gently foot-pressed before being transferred to the press. The wine was finally aged in old barrels that had previously held several different wines to avoid any woody notes. No sulfur was used, of course. Quite simply a great wine, but one that still needs a few more months of rest before being uncorked, according to Christian. So please wait patiently for the wine to rest and come into its own ;)
Aube 2024 is undoubtedly the most iconic cuvée from the Dandelion estate. This single-vineyard Pinot Noir comes from a single plot in the Hautes-Côtes located at 420 meters (the highest!), where the white marl brings freshness, tension, and depth to the wine. The vineyard is tended by hand and plowed by horse. After two weeks of whole-cluster fermentation, Morgane and Christian age the cuvée for a year in old barrels to preserve the fruit’s purity and the expression of the terroir.
The wines are made from whole clusters, with a fermentation period of about twenty days, pressed using an old wooden press, aged in old barrels, and with minimal intervention: no pumps, no synthetic products. In keeping with their principles in the vineyard, Morgane and Christian do not use sulfur and can therefore proudly display the term “nature” on their magnificent labels, which are made in Auvergne in a 15th-century paper mill. They are crafted from cotton, linen, and hemp fibers. The small flowers incorporated into the paper (cornflowers, calendula, grasses, ferns...) are grown on-site, and the labels are then cut out and glued by hand.
