Exceptional Nuits-Saint-Georges
Today we have the great pleasure of presenting to you one of the most popular Côte-de-Nuits estates outside our borders and which, unfortunately, is therefore very rare in France.
For our greatest happiness, we are lucky, at Mes Bourgognes Beaune, to have the confidence of Denis and Bertrand Chevillon for many years and it is with real emotion that we offer you the wines of these emblematic winegrowers of Nuits -Saint Georges.
"Our know-how inspired by tradition but also by modern methods, naturally pushes us towards the creation of fine wines", like to explain the two brothers.
For four generations, the Chevillon family has been deeply attached to the cultivation of vines. Using traditional methods, they take the greatest care of their 13 hectares of old, even very old, vines, mostly spread over Nuits-Saint-Georges, including 8 hectares of premier crus with in particular the highly sought-after Vaucrains and Les Saint-Georges. George.
"Initially, something a bit magical animates us every year: it is the alliance of the terroirs, the climate and the result of our work with the only grape variety, Pinot noir", add the two winegrowers.
In vinification, no mystery, everything is done in the pure Burgundian tradition in order to produce balanced, deep and fine wines. The aging is long, even very long (15 to 18 months) and is done for 30% in new barrels and 70% in barrels of one wine, always with the idea of giving pride of place to the terroir while avoiding any unwelcome artifice or masking.
"The aging conditions have a very important influence on the stability of our wines, as well as on their aging," they point out. “Time, malolactic fermentation rate, lees interaction, management of racking and desired degree of aeration are all painstakingly done. »
8 cuvées: 6 exceptional premier crus from the most beautiful terroirs of Nuits-Saint-Georges, a splendid Nuits village in old vines and an absolutely delicious generic Burgundy for those who want to gently discover the enormous potential of this estate. As usual, the wines are already marvelous at present due to their fine acidity and exemplary balance, but we can only advise you to put them in cellars for several years in order to allow its magnificent climates to express all their potential.
