Chablis, differently

In the north of Burgundy, in the heart of a famous appellation but often unknown to true wine lovers, Athénaïs de Béru is a rebel. It must be said that working biodynamically, with small yields, seeking maturity and expression of the terroir, is not common in Chablis.

Here, unfortunately, quantity is often preferred to quality. But for a few years now, authentic and motivated winemakers have decided to change things. Alice and Olivier de Moor opened the way, Thomas Pico followed them and today Athénaïs de Béru joins them.

"In Chablis, there are not many of us working in organic, but we form a good group. We found ourselves in resistance despite ourselves. But these small domains are doing very well and are restoring the image of Chablis, which had become a very standardized product," explains Athénaïs with conviction. 

This young winemaker took over the family estate between 2006 and 2009 and immediately began the conversion to organic farming. Since 2010, all the plots are organic and also 100% certified biodynamic. At the head of 15 hectares, she produces mainly 5 cuvées of Chablis including the 1er cru Vaucoupion and the superb Clos Béru. Athénaïs' wines have now reached an impressive level of precision and perfectly reflect these beautiful terroirs spread around the hill of Béru and worked with the greatest respect throughout the year.

"When people tell us that our wines are not like the Chablis they are used to drinking, we take it as a compliment. (laughs). People think it's very mature. We explain to them that we make smaller yields, that we harvest at maturity, etc.," adds Athénaïs with a big smile.
