Nicolas Vauthier is one of Burgundy's most endearing and colorful characters. He set up his vats and barrels in 2008 in the north of the region, near Avallon. After 10 years at Les Crieurs de Vins, a highly recommended natural wine bar in Troyes and a veritable institution in its own right, this enthusiast decided to launch his own haute couture business.

His concept is clear: find magnificent organic grapes in northern Burgundy, on terroirs that are often underestimated (Irancy, Epineuil, Coulanges...) and vinify them as naturally as possible: without any inputs, without sulfur of course, without too much wood or any intervention that might upset the balance of his juices (racking without pumping in particular).

The advantage of having vines in northern Burgundy is that, even in hot vintages, you have freshness. And that's exactly what characterizes these latest little nuggets to come out of his cellar.

What can I say about his wines? They're addictive! If you've never tasted his Aligoté, for example, you've got to do something about that! And what about these 2 incredible macerations of Melon and Pinot Blanc. These juices are delicious, fresh, digestible, straightforward and perfectly balanced. Finally, the beautiful Cuvée Chanvan blanc is a superb Chardonnay of exemplary finesse.

Of course, the reds are not to be outdone, starting with his great cuvées from Irancy. 100% Pinot Noir in whole bunches, which shines through with its precision and truly stunning depth. In short, these are wines for pleasure, but with a little patience, they'll have more to tell us in a few years' time.
