The apples are ripened and pressed on the estate, aged in wood without added sulfites, and the result is simply superb. Very gourmet, magical with desserts, with real depth and a remarkable texture (7% alcohol), making it incredibly drinkable.

Seven months of aging in vats. Light filtration. Bottled in April 2025. Eos is a wine with crisp fruit and delicate texture.

A little firecracker, in the best sense of the word, perfect for an aperitif... but not only.
24hr maceration on skins then pressing and fermentation for 1 month in vats before bottling. No sulphiting.
