Clos Bateau€28.00"Since we decided in 2022 to dig 2 Georgian Qvevri’s in our garden, we knew we had to do something special with it. After our experiments with different grapes and periods of maceration it was clear for us. We love the grape Pinot Noir and decide to do very long macerations with it and since vintage ’22 our cuvée Sang de Terre was born. After 10 months maceration we decided it was ready to press. With a small bucket we must take out all the grapes and we press it with our wooden press. After pressing the wine takes a nap of 1,5 month in barrel and it was time to bottle!" Production of just 760 bottles

Bourgogne Pinot Noir 2023
De Béru Athènaïs€29.00This wine is made from Pinot Noir vines located in the Saint-Bris commune, planted at an altitude of between 210 and 250 m. Whole bunches are vatted and fermented in a truncated wooden vat; Fermentation with indigenous yeasts and vinification with no inputs; Grapes are gently infused; Light pumping over and punching down ensure gentle extraction; Total maceration of 2 to 3 weeks; Finally, ageing for one year in 12 to 18-month Burgundy barrels.
This wine is the perfect definition of a natural Burgundy Pinot Noir: fresh, slender, perfectly structured, spicy just right, and capable of provoking immediate pleasure. A sure-fire favorite.

Piemonte Dolcetto 2023
Recchione Jérémy€29.00Terroir in the foothills of the Capriato d'Orba commune. Clay-limestone terroir at an altitude of 220 meters. The Dolcetto grapes are destemmed and left to macerate for 48 hours on skins. This is followed by slow pressing to extract the noblest material. Half of the wine is fermented in stainless steel tanks and half in Burgundy barrels made by cooper Chassin for 9 months. A ruby-colored wine with notes of red fruit, elegant and fine.

Hautes Côtes de Beaune 2023
Mandelot€30.0060% whole grapes. Vinified for 19 days in vats. Two light punchings of the cap. Aged in 2- to 4-wine barrels. Release in May. No added sulfites (or other inputs) from harvest to bottling. The whole harvest is perfectly controlled, allowing the juices to develop an incredible energy. Superb.
