Aptemiz Blanc 2024
Clos Bateau€23.00"In 2020 we did a test with a 2 year maceration of chardonnay to see the flow of the wine with quit long maceration. This is something we do by feeling, curiosity and testing to see what will be the right amount of time. That’s why we decided the last 2 years to have a bit longer maceration for Aptemiz. For 23 it turned out the magical 10 months. The grapes where destemmed by hand on a wooden board and after vinified and aged on amphora." Production of just 670 bottles

The nose blends ripe citrus, white flowers, and a slightly chalky note typical of the great terroirs of L’Étoile. On the palate, the wine has a delicate yet taut texture, with great fluidity and a particularly addictive, briny finish. A luminous, precise, and incredibly easy-drinking Jura white.

Derthona Timorasso 2023
Recchione Jérémy€32.00Derthona comes from the Roman name given to Tortone, a town south of Milan. It's a white wine made from the Timorrasso grape variety. From the Piedmont region, Derthona is the DOC neighbor of Barolo with its emblematic Nebbiolo grape. The terroir is clay-limestone on the Derthona hills. This grape variety almost disappeared in the 1960s, in favor of the Cortese variety that produces the wines of the Gavi appellation. Yet it's a grape variety that now wants to compete with its world-famous nebbiolo neighbor. Timorrasso is even considered the future white Barolo.
