Hautes Cotes Nature 2024
Dandelion€55.00Domaine Dandelion's great and beautiful cuvée, the one that has obviously made their reputation. It's a pure Pinot Noir made in the true Burgundian tradition, with beautiful grapes harvested when ripe, vinified in whole bunches and macerated for around twenty days. The grapes were then delicately foot-pressed before going to the press. Finally, the wine was aged in old, multi-wine barrels to avoid any marking of the wood. No sulfur was used, of course. Quite simply, a great wine, but one that needs a few more months of rest before it can be uncorked, according to Christian. So please wait patiently for the wine to rest and take flight ;)

Dandelion€65.00Aube 2024 is undoubtedly the most iconic wine from the Dandelion estate. This single-vineyard Pinot Noir comes from a single plot in the Hautes-Côtes, situated at 420 meters (the highest!), where the white marl soils lend the wine freshness, tension, and depth. The vineyard is tended by hand and plowed by horse. After two weeks of whole-cluster fermentation, Morgane and Christian age the wine for a year in old barrels to preserve the fruit’s purity and the expression of the terroir.

While the color may appear simple and light, the aromas and palate are, in contrast, highly complex. The nose offers straightforward notes of ripe red fruit, peony, and red rose, while the palate is slightly spicy with a long finish. A very refined wine with excellent aging potential.

Corton Maréchaudes Grand Cru 2021 SSA
Chandon de Briailles€210.00Beneath the Corton "Bressandes" and next to the Corton "Vergennes", this shallow, east-facing limestone terroir produces early ripening. This elegant wine can be enjoyed young. It is said to be feminine for its finesse and freshness, but also for its soft construction and velvety texture. Although it's tempting to drink it in its 3rd or 4th year, it's best kept for 8 to 15 years.
