The apples are ripened and pressed on the estate, aged in wood without added sulfites, and the result is simply superb. Very gourmet, magical with desserts, with real depth and a remarkable texture (7% alcohol), making it incredibly drinkable.

Seven months of aging in vats. Light filtration. Bottled in April 2025. Eos is a wine with crisp fruit and delicate texture.

Fermentation was completed in vats, followed by 9 months of aging in barrels. 72% Cabernet Franc, 15% Pinot Noir, and 13% Chenin. Spicy aromas, light tannins, and delicate structure.
