Hautes Cotes Nature 2023
Domaine Dandelion€55.00Domaine Dandelion's great and beautiful cuvée, the one that has obviously made their reputation. It's a pure Pinot Noir made in the true Burgundian tradition, with beautiful grapes harvested when ripe, vinified in whole bunches and macerated for around twenty days. The grapes were then delicately foot-pressed before going to the press. Finally, the wine was aged in old, multi-wine barrels to avoid any marking of the wood. No sulfur was used, of course. Quite simply, a great wine, but one that needs a few more months of rest before it can be uncorked, according to Christian. So please wait patiently for the wine to rest and take flight ;)
