Fermentation was completed in vats, followed by 9 months of aging in barrels. 72% Cabernet Franc, 15% Pinot Noir, and 13% Chenin. Spicy aromas, light tannins, and delicate structure.

Bourgogne Pinot Noir 2023
De Béru Athènaïs€29.00This wine is made from Pinot Noir vines located in the Saint-Bris commune, planted at an altitude of between 210 and 250 m. Whole bunches are vatted and fermented in a truncated wooden vat; Fermentation with indigenous yeasts and vinification with no inputs; Grapes are gently infused; Light pumping over and punching down ensure gentle extraction; Total maceration of 2 to 3 weeks; Finally, ageing for one year in 12 to 18-month Burgundy barrels.
This wine is the perfect definition of a natural Burgundy Pinot Noir: fresh, slender, perfectly structured, spicy just right, and capable of provoking immediate pleasure. A sure-fire favorite.
