Domaine de Mandelot€30.0060% whole grapes. Vinified for 19 days in vats. Two light punchings of the cap. Aged in 2- to 4-wine barrels. Release in May. No added sulfites (or other inputs) from harvest to bottling. The whole harvest is perfectly controlled, allowing the juices to develop an intoxicating energy. Superb.

Jeremy Recchione€55.00Terroir in the village of Comblanchien, composed of Bathonian limestone. 80% whole-cluster Pinot Noir. Cold pre-fermentation for 3 days, 15-day fermentation in stainless steel tanks, slow pressing and racking into 228-liter barrels. Aged 11 months.
