Chenu Louis & filles€43.00Les Lavières tirent leur nom des laves de leur sous-sol qui est recouvert de terres brunes très caillouteuses.Très parfumé, dans son début, ce premier cru le reste en vieillissant, ce qui est typique de cette appellation. Il donne un vin tendre, élégant et plaisant dans sa jeunesse, en raison de sa finesse. Il dégage très tôt de nombreux arômes de fruits rouges et celui de violette. Il reste très soutenu en vieillissant. Il développe avec l'âge un goût de terroir rappelant l'odeur de la pierre à fusil ou de fumé. Il peut se conserver sans problème une quinzaine d'années.

Recchione Jérémy€45.00Derthona comes from the Roman name given to Tortone, a town south of Milan. It's a white wine made from the Timorrasso grape variety. From the Piedmont region, Derthona is the DOC neighbor of Barolo with its emblematic Nebbiolo grape. The terroir is clay-limestone on the Derthona hills. This grape variety almost disappeared in the 1960s, in favor of the Cortese variety that produces the wines of the Gavi appellation. Yet it's a grape variety that now wants to compete with its world-famous nebbiolo neighbor. Timorrasso is even considered the future white Barolo.

Savigny-les-Beaune 1er Cru Haut Jarrons 2022
Chenu Louis & filles€45.00Les Hauts-Jarrons (Jarrons signifiant branches d'arbres) se situent en plein coteau, sous la colline du Mont Battois, en direction de Beaune. Leur sol est profond et sablonneux, et ressemble à celui des Beaune-Bressandes. Les vins sont, de la même manière, plus proches de ceux de Beaune que de ceux de Savigny. Ils possèdent de jolis arômes mais demandent quelques années avant d'atteindre leur plénitude et sont propices à un long vieillissement.

Hautes Cotes Nature 2023
Dandelion€55.00Domaine Dandelion's great and beautiful cuvée, the one that has obviously made their reputation. It's a pure Pinot Noir made in the true Burgundian tradition, with beautiful grapes harvested when ripe, vinified in whole bunches and macerated for around twenty days. The grapes were then delicately foot-pressed before going to the press. Finally, the wine was aged in old, multi-wine barrels to avoid any marking of the wood. No sulfur was used, of course. Quite simply, a great wine, but one that needs a few more months of rest before it can be uncorked, according to Christian. So please wait patiently for the wine to rest and take flight ;)
