Vendanges manuelles, tri drastique des raisins, cuvaison à froid et, évidemment, fermentation spontanée et naturelle. Vinification sans aucun intrant puis élevage en amphores de terre cuite de 160 litres pendant 8 mois. Un vin profond qui exprime avec justesse ce beau terroir auvergnat.
