Tigerno 2021
Clos Luern€19.00Tigerno est la cuvée phare du domaine, vrai vin signature précis et délicat issue d'une parcelle centenaire de gamays d'Auvergne. Vendanges manuelles, tri drastique des raisins, cuvaison à froid et, évidemment, fermentation spontanée et naturelle. Vinification sans aucun intrant puis élevage en amphores de terre cuite de 160 litres pendant 8 mois. Un vin profond qui exprime avec justesse ce beau terroir auvergnat.

Clos Luern€19.00Aurore est un très beau Chardonnay planté sur une coulée de basalte il y a maintenant 4 ans. C'est une vigne jeune mais au potentiel impressionnant.

La Mutine€22.0030 ares on a hillside, 30 years old. Hand-picked in crates. Native yeast, unfiltered. Shallow chalky soil (same plot as Vézelay).

Chaume des Lies€28.00Aligotés located at the highest point of the plateau, on red clay soils. Second release of this cuvée, which has benefited from two years of extended aging. The wine gains in volume and fullness. Magnificent.

Bourgogne "Les Jus" 2023
La Mutine€29.00A blend of three vineyard sites: Sur les Roches, La Chanterie, and Clos Du. Macerated for 8 days with whole clusters, pressed before the end of sugar extraction, followed by another 4–5 days of fermentation in the must; aged in stainless steel tanks; to be released in July 2025.
