From the Beaujolais-Villages appellation, this cuvée was vinified with 100% destemmed grapes and very little extraction. Selected yeasts. Fifteen days of maceration. Seven months of aging in vats. Light filtration. Bottled in April 2025. Eos is a wine with crisp fruit and delicate texture.

A Côte de Beaune Chardonnay vinified without artifice, with discreet aging that highlights the freshness and purity of the fruit and a beautiful mineral structure.

Sylvain Pataille's most ambitious cuvée. Old vines, whole harvest, long ageing: everything is done to produce a great wine for laying down. Concentrated, intense, almost sappy. Wait or decant for a long time.
